This is a client-facing leadership role requiring a strong background in both hotel/corporate environments. The ideal candidate will have experience managing high-volume food production while maintaining premium culinary standards.
Key Responsibilities
- Lead the planning, preparation, and presentation of high-quality meals in accordance with contractual requirements and company standards.
- Develop menus and recipes that meet client expectations while achieving quality and cost objectives.
- Oversee day-to-day kitchen operations, ensuring efficient and timely food production and service.
- Lead, coach, and develop the kitchen team to deliver operational excellence.
- Monitor food quality, presentation, taste, and customer satisfaction, implementing continuous improvements.
- Manage food costing, inventory, stock rotation, requisitions, and waste control.
- Ensure full compliance with HACCP, food safety, hygiene, and health regulations.
- Coordinate manpower planning and kitchen schedules to ensure smooth operations.
- Build and maintain strong relationships with the client by delivering exceptional service and responding proactively to feedback.
- Conduct staff training and on-the-job coaching to continuously improve team performance.
- Support VIP functions, special events, and bespoke catering requirements.
Job Requirements
- Diploma or Degree in Culinary Arts, Hospitality Management, or a related discipline.
- Minimum 8–10 years of culinary experience, including 3–5 years as an Executive Chef, Head Chef, or similar leadership role.
- Mandatory experience in a 4-star or 5-star hotel environment.
- Experience in corporate dining, contract catering is essential.
- Proven experience managing high-volume food production while maintaining premium quality and presentation.
- Strong knowledge of menu planning, recipe development, food costing, budgeting, and inventory management.
- Sound knowledge of HACCP, food safety, and hygiene standards.
- Excellent leadership, communication, and people management skills.
- Strong client relationship and stakeholder management skills.
- Ability to work in a fast-paced, multicultural, client-site environment.
